All grains have different kinds of gluten, which are proteins. They use “gluten-free” mainly to mean gliadin-free, which is the kind of gluten specific to wheat. But corn, too, has gluten!
One very interesting topic discussed in this video is cross-reactivity, where the immune system will not only attack gliadin as a foreign invader, but also similar proteins. Hence people with Celiac disease might continue to be ill even after supposedly going “gluten-free” because they have simply replace some gluten-containing grains with others.
