We tried several ceramic coated pans, but found they weren’t durable, and with dings and scratches in the ceramic, you’re still exposing food to the aluminum undersurface. We finally decided to stick with stainless steel, which is safe, durable, doesn’t stick when heated with a little olive or coconut oil, and is super easy to clean.
